Ingredients (serves 2)
- 400g tinned tomatoes (drained), chopped
- 2 eggs
- 3 tbsp cheese, grated
- ½ tsp mixed herbs
Method
- Put oven on 180'C/Gas mark 4
- Place chopped and drained tomatoes into a shallow ovenproof dish
- Break eggs on top of tomatoes
- Sprinkle mixed herbs on top
- Sprinkle grated cheese on top
- Place in oven for 20 mins or until eggs have set
- Serve with either little potatoes or toast
